p\u00e9rdida de aceite en el alperujo est\u00e1 en torno del 3% al 4% de aceite sobre muestra h\u00fameda en condiciones normales .La importancia de conseguir mejoras en el rendimiento de este proceso industrial viene dada por el fuerte impacto que tiene este producto en la econom\u00eda espa\u00f1ola y en especial la andaluza.En control de calidad en tareas industriales , mediante visi\u00f3n por en otros campos.La base para aplicarlo en alperujos es que 1)el experto (maestro molinero)hace uso de informaci\u00f3n t\u00e1ctil y visual para realizar ciertas tareas de control de buen funcionamiento de la planta; 2)los expertos qu\u00edmicos que se dedican al an\u00e1lisis de orujos, conocen con con la experiencia (visualmente), si los orujos son de repaso (agotados), o si por el contrario , contienen un porcentaje significativo de aceite y se el porcentajes de humedad es importante; 3)la caracteristica visual relacionada con la informaci\u00f3n t\u00e1ctil es la textura.M\u00e9todos alternativos como resonancia magn\u00e9tica nuclear (rmn) y soxhlett  requieren un secado previo de la muestra que implica al menos , 6-7 horas de espera para la obtenci\u00f3n del resultado anal\u00edtico (en el caso del m\u00e9todo soxheltt hay que sumar a este tiempo el de extraci\u00f3n de la grasa por el disolvente.El m\u00e9todo de infrarrojo cercano (nir) es m\u00e1s r\u00e1pido en el tiempo de respuesta (varios minutos)pero se necesita de la manipulaci\u00f3n de un operario (especializado)y deuna buens calibraci\u00f3n de los dispositivos.Con el sistema propuesto se pretende mejorar el rendimiento en la producci\u00f3n de aceite en las almazaras , mediante la aplicaci\u00f3n de t\u00e9cnicas de an\u00e1lisis de im\u00e1genes.Para ello , se ha dise\u00f1ado un sistema que alimenta de orujo , de maner continua y uniforme la c\u00e1mara para la toma de im\u00e1genes.Las im\u00e1genes se env\u00edan a un<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la
