{"id":74976,"date":"2018-03-09T23:20:04","date_gmt":"2018-03-09T23:20:04","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/palinologia-y-caracteres-fisico-quimicos-del-polen-apicola-producido-en-espana-propuesta-de-parametros-objetivos-de-calidad\/"},"modified":"2018-03-09T23:20:04","modified_gmt":"2018-03-09T23:20:04","slug":"palinologia-y-caracteres-fisico-quimicos-del-polen-apicola-producido-en-espana-propuesta-de-parametros-objetivos-de-calidad","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-de-la-vida\/palinologia-y-caracteres-fisico-quimicos-del-polen-apicola-producido-en-espana-propuesta-de-parametros-objetivos-de-calidad\/","title":{"rendered":"Palinolog\u00eda y caracteres fisico-quimicos del polen apicola producido en espa\u00f1a. propuesta de parametros objetivos de calidad"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Carlos Cordon Marcos <\/strong><\/h2>\n<p>(se estima que la producci\u00f3n anual de polen ap\u00edcola en espa\u00f1a supera las 1000 toneladas, la mayor\u00eda destinado a la exportaci\u00f3n donde alcanza un precio elevado debido a su composici\u00f3n floral.  se estudi\u00f3 el origen bot\u00e1nico, caracteres sensoriales y composici\u00f3n f\u00edsico-qu\u00edmica de las muestras  (55 muestras de polen ap\u00edcola espa\u00f1ol proporcionadas por apicultores y tiendas especializadas).  la composici\u00f3n palinol\u00f3gica fue la siguiente: 72% cist\u00e1ceas (92,7% corresponde a cistus ladanifer), 9% boragin\u00e1ceas, 3-4 papilon\u00e1ceas, aster\u00e1ceas y fag\u00e1ceas y 1% ros\u00e1ceas y eric\u00e1ceas.  la composici\u00f3n general fue la siguiente; prote\u00ednas 16,20 %, az\u00facares reductores 35,08%, grasas 6,16%, cenizas 1,77% y humedad 5,62%. Tambi\u00e9n se estudi\u00f3 el ph (4,91) y el tama\u00f1o de las cargas (2,6 mm).  se analiz\u00f3 en contenido en f\u00f3sforo, sodio, potasio, magnesio, calcio, alumnio, s\u00edlice, azufre, cadmio, cobalto, cromo, n\u00edquel, cobre, hierro, manganeso y zinc. Los resultados mostraron la gran cantidad de f\u00f3sforo y potasio que posee este producto.  se han encontrado 22 amino\u00e1cidos libres siendo la prolina el mayoritario. es de destcar la presencia en muchas muestras de  gaba libre. La prolina es tambi\u00e9n el amino\u00e1cido total m\u00e1s abundante, pero seguido de cerca por el \u00e1cido glut\u00e1mico.  existe una gran relaci\u00f3n esntre los taxones pol\u00ednicos y la composici\u00f3n f\u00edsico-qu\u00edmica. Por eso se han separado manualmente cargas de cistus ladanifer y echium plantagineum procediendo al an\u00e1lisis de las fracciones monoflorales.  se ha empleado una columna de inmunoafinidad para la determinaci\u00f3n simult\u00e1nea de aflatoxinas y ocratoxina a en polen ap\u00edcola espa\u00f1ol, si bien no se encontraron estas cinco micotoxinas (aflatoxina b1, b2; g1 y g2 y ocratoxina a) en las muestras analizadas.  estos estudios debieran tenerse en cuenta para una futura norma de calidad europea que consideramos tendr\u00edan que incluir caracter\u00edsticas sensoriales,
