Se pone de manifiesto la relevancia de la enzima tirosinasa, la cual es capaz de catalizar con una alta afinidad la hidroxilaci\u00f3n de betaxantinas monofen\u00f3licas. as\u00ed mismo, se describe la transformaci\u00f3n de betaxantinas difen\u00f3licas en formas leuko an\u00e1logas a la betacianina betanidina, la cual tambi\u00e9n se describe como substrato de tirosinasa.  una de las caracter\u00edsticas m\u00e1s intrigantes de esta enzima es su capacidad de existir en un estado inactivo o latente. Tirosinasa puede ser activada por una variedad de tratamientos o agentes, incluyendo la inducci\u00f3n de cambios en su estructura por la presencia del detergente ani\u00f3nico dodecil sulfato s\u00f3dico (sds) y por proteolisis parcial.  en este sentido, se describe la presencia de formas latentes de tirosinasa en una fuente formadora de betala\u00ednas y se describe pormenorizadamente el fen\u00f3meno de activaci\u00f3n. Ello lleva a evidenciar la existencia de un mecanismo com\u00fan en la activaci\u00f3n mediada por detergentes y proteasas y permite el desarrollo de nuevo modelos cin\u00e9ticos.  la caracterizaci\u00f3n de la actividad de tirosinasa sobre diversas betala\u00ednas se basa en el desarrollo de protocolos para la s\u00edntesis, extracci\u00f3n y purificaci\u00f3n de estos pigmentos. Ello lleva, adem\u00e1s, a estudiar sus propiedades fisiquicoqu\u00edmicas, poniendo de manifiesto la existencia de fluorescencia visible en betaxantinas. todas las especies analizadas muestran un comportamiento similar, con m\u00e1ximos de excitaci\u00f3n comprendidos entre 463 y 475 nm y m\u00e1ximos de emisi\u00f3n comprendidos entre 506 y 515 nm.
