En algunos de ellos, como los quesos, se ha comprobado su intervenci\u00f3n beneficiosa en el madurado de los mismos.  \u00faltimamente, se ha sugerido que pod\u00eda a\u00f1adirse a los cultivos iniciadores de los embutidos para mejorar sus caracter\u00edsticas organol\u00e9pticas. Sin embargo en esta tesis se comprueba por un lado la capacidad fisiol\u00f3gica (aumento del rendimiento metab\u00f3lico) para desarrollarse en las condiciones ambientales de las c\u00e1maras de maduraci\u00f3n y por otro lado, la capacidad para deteriorar mediante la producci\u00f3n de gas, incrementada en presencia de los aditivos que habitualmente se utilizan para la del procesado de los embutidos. En esta tesis, adem\u00e1s, se dise\u00f1a y se eval\u00faa la calidad de un medio cromog\u00e9nico, selectivo y diferencial, para esta levadura basado en la detecci\u00f3n de la enzima beta-glucuronidasa. Del mismo modo, se desarrolla un m\u00e9todo de detecci\u00f3n diferencial frente a otras especies de levadura que contaminan frecuentemente alimentos basado en el estudio del polimorfismo de los fragmentos de restricci\u00f3n de la regi\u00f3n igse del dna ribos\u00f3mico (pcr-rflp igs rdna).
