Sagrario <\/strong><\/h2>\n<p>El objetivo fundamental de este trabajo, que se centra en la caracterizacion analitica de los vinos acogidos a la denominacion de origen rias baixas, es el desarrollo y perfeccionamiento de la metodolog\u00eda analitica para el estudio de los compuestos del aroma de estos vinos con el fin de emplear estos datos como variables en el tratamiento quimiometrico del problema. Se realizo una aproximacion a la caracterizacion analitica de estos vinos empleando los datos de alcoholes monoterpenicos extraidos con freon 11 y compuestos del aroma analizados mediante espacio de cabeza estatico y mediante purga y atrapado en frio. Se realizo tambien una evaluacion sensorial de los vinos de esta denominacion de origen con el fin de correlacionar estos datos sensoriales con los parametros analiticos obtenidos en el laboratorio.  como resultado se puede decir que es posible diferenciar los vinos de la d.O.
