Se validaron t\u00e9cnicas de an\u00e1lisis por inyecci\u00f3n de flujo (fia) para la determinaci\u00f3n de trimetilamina (n-tma)y nitr\u00f3geno b\u00e1sico vol\u00e1til total (n-bvt) en boquer\u00f3n, en comparaci\u00f3n con m\u00e9todos de referencia. el fia mostr\u00f3 un alinealidad y exactitud equivalentes alos m\u00e9todos de referencia, pero fue m\u00e1s preciso y ocn la ventaja a\u00f1adida e su rapidez y menor coste. se validaron tablas de an\u00e1lisis sensorial espec\u00edficamente dise\u00f1adas para valorar la frescura el boquer\u00f3n, crudo (quality index metrhod, qim) y cocido, resultando concordantes conlos par\u00e1metros microbiol\u00f3gicos legalmente establecidos. durante el almacenamiento en hielo del boquer\u00c2\u00bf\u00c2\u00bfon almacenado en hielo (5 d\u00edas).  las aminas vol\u00e1tiles (n-tma y n-bvt)no ser\u00edan adecuadas com indicadoras del grado de frescura, pues no mostraron cambios significativos durante la primera quincena de almacenamiento. La cadaverina seguida de putrescina y en menor grado de frescura, pues no mostraron cambios significativos durante la primera quincena de almacenamiento. La cadaverina seguida de putrescina y en menor grado de tiramina e histamina fueron las aminas bi\u00f3genas (ab) de acumulaci\u00f3n mayoritaria. La suma de estas cuatro ab se propuso como \u00edndice par la valoraci\u00f3n de la frescura del boquer\u00f3n en hielo, con un l\u00edmite de aceptaci\u00f3n de 15 mg\/kg, en concordancia con la evaluaci\u00f3n sensorial y microbiol\u00f3gia. Adem\u00e1s, se estudi\u00f3 la capacidad aminog\u00e9nica de bacterias aisladas durante al almacenamiento. Las bacterias gram- (enterobacterias y pseudomonas)fueron productoras de diaminas y se encontraron durante las dos primeras semanas de almacenamiento.
