Para paliar los posibles efectos negativos del empleo de esta tecnolog\u00eda se han desarrollado una serie de recursos aplicables para asegurar el correcto desarrollo de la fermentaci\u00f3n como son: adici\u00f3n de materia nitrogenada, aireaci\u00f3n, adici\u00f3n de factores de supervivencia, adici\u00f3n de cortezas de levadura y adici\u00f3n de sustancias con efecto soporte. Esta tesis doctoral estudia la incidencia de la utilizaci\u00f3n de estos recursos en la selecci\u00f3n natural de cepas de saccharomyces cerevisiae que dirigen la fermentaci\u00f3n, puesto que las caracter\u00edsticas enol\u00f3gicas de los clones dominantes durante la fermentaci\u00f3n influir\u00e1n en el desarrollo de la misma y en las caracter\u00edsticas del vino obtenido. Como resultados m\u00e1s interesantes cabe destacar que el m\u00e9todo empleado en el desfangado de los mostos influy\u00f3 en la distribuci\u00f3n del factor killer y en la distribuci\u00f3n de clones de saccharomyces cerevisiae. Cuando se presentaron condiciones problem\u00e1ticas de fermentaci\u00f3n (altas temperaturas o elevada presencia de clones no-saccharomyces), las cortezas de levadura y una de las celulosas
