Teresa <\/strong><\/h2>\n<p>El objetivo principal de este trabajo es la evaluacion de la calidad higienico sanitaria de las comidas distribuidas en los comedores de una empresa. El valor nutritivo se estima mediante la determinacion del contenido de los principios inmediatos y sales minerales (cinc, cobre y hierro). Se calcula el valor energetico y se determina la fibra por su importancia fisiologica. Los valores hallados, se comparan con las recomendaciones y los datos de consumo para la poblacion espa\u00f1ola la calidad higienico-sanitaria se evalua mediante los siguientes parametros: recuento de colonias aerobias mesofilas, psicotroficos, enterobacterias totales, escherichia coli, salmonella-shigella, staphylococcus aureus enterotoxigenico, clostridios anaerobios sulfito-reductores, clostridium perfringens. El aporte energetico de los menus responde a las recomendaciones, aunque la contribucion de los distintos principios inmediatos al mismo es desequilibrada; similar a la de la mayoria de los paises occidentales. La ingesta proteica es muy alta. En definitiva, se puede decir que la calidad higienico- sanitaria es buena. Los resultados obtenidos en la evaluacion del valor nutritivo muestran que los menus servidos siguen la tendencia de la alimentacion de la poblacion espa\u00f1ola.
