El uso de coadyuvantes y aditivos, mantiene en alerta a las autoridades alimentarias y plantea desaf\u00edos interesantes no solo para la mejora de la industria panadera, sino para corregir eventuales problemas que se derivan de aspectos diversos y que modifican la calidad de la harian y del gluten.  el objetivo de esta tesis es el etudio del efecto de la aplicaci\u00f3n de diversos tratamietnos  enzim\u00e1ticos sobre la fracci\u00f3n proteica y la microestructura de masas panarias. Se aplican diversos tratamientos con las enzimas transglutaminasa, glucosaoxidasa y tirosinasa y se estudian las masas , el gluten y sus fracciones proteicas, mediante diversas t\u00e9cnicas microsc\u00f3picas, como son la microscop\u00eda electr\u00f3nica de barrio  (sem), la cuantifican las fracciones proteicas de las masas panarias obtenidas mediante la t\u00e9cnica del nitr\u00f3geno kjeldahl y se utiliza la t\u00e9cnidca de la electroforesis en gel de poliacrilamida con sds (sds-page) para complementar el estudio qu\u00edmico de las fracciones proteicas.  los resultados obtenidos muestran que las enzimas estudiadas modifican de forma diferente  a la fraccion soluble (alb\u00faminas y globulinas) y al gluten (gliadinas y gluteninas) y , por tanto,tienen efectos finales diferentes sobre las masas panarias.  es necesario optimizar las dosis de transglutaminasa (tg) y glucosaoxidasa (gox) que se a\u00f1aden a una harina , para obtener masas con las propiedasdes reol\u00f3gicas de tenacidad (p) y extensibilidad (l) equilibradas. La adici\u00f3n de dosis crecientes de tg \u00f3 gox aumentan p y disminuyen l. La adici\u00f3n de dosis crecientes de tg disminuye la solubilidad de las alb\u00faminas y del gluten lo que indicar\u00eda un efecto polimerizante dela enzima sobre estas prote\u00ednas.
