{"id":76010,"date":"2018-03-09T23:21:19","date_gmt":"2018-03-09T23:21:19","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/estudio-y-caracterizacion-molecular-de-la-produccion-de-aminas-biogenas-por-parte-de-bacterias-lacticas-de-origen-enologico\/"},"modified":"2018-03-09T23:21:19","modified_gmt":"2018-03-09T23:21:19","slug":"estudio-y-caracterizacion-molecular-de-la-produccion-de-aminas-biogenas-por-parte-de-bacterias-lacticas-de-origen-enologico","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-de-la-vida\/estudio-y-caracterizacion-molecular-de-la-produccion-de-aminas-biogenas-por-parte-de-bacterias-lacticas-de-origen-enologico\/","title":{"rendered":"\u00abestudio y caracterizaci\u00f3n molecular de la producci\u00f3n de aminas bi\u00f3genas por parte de bacterias l\u00e1cticas de origen enol\u00f3gico\u00bb"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Jos\u00e9 Mar\u00eda Landete Iranzo <\/strong><\/h2>\n<p>Dada la influencia negativa de la presencia de aminas bi\u00f3genas en el vino, por el efecto perjudicial sobre la salud humana y por la disminuci\u00f3n de las calidad del vino y la presencia de las bacterias l\u00e1cticas (bl) en los mismos, en esta tesis nos planteamos determinar la importancia de las bl en la presencia de estas aminas en el vino, as\u00ed como que factores pod\u00edan influir en la concentraci\u00f3n de las mismas o en la mayor o menor producci\u00f3n por parte de las bl.  en primer lugar, desarrollamos un m\u00e9todo enzim\u00e1tico que permite analizar la concentraci\u00f3n de histamina en vino y la producci\u00f3n de la misma por bl, a continuaci\u00f3n analizamos la concentraci\u00f3n de histamina, tiramina, feniletilamina, putrescina, cadaverina y triptamina en vinos de distintas zonas geogr\u00e1ficas y de distintas variedades de uva, as\u00ed como la influencia del ph, de la fermentaci\u00f3n malol\u00e1ctica, fermentaci\u00f3n llevada a cabo por bl, y de los periodos de almacenamiento, adem\u00e1s, la capacidad aminobiog\u00e9nica de bacterias aisladas de algunos vinos tambi\u00e9n fue analizada.
