Trinidad <\/strong><\/h2>\n<p>Se eval\u00faan una serie de par\u00e1metros f\u00edsicos, qu\u00edmicos y microbiol\u00f3gicos, con especial dedicaci\u00f3n a la fibra alimentaria en los vegetales br\u00e9col, coles de bruselas, esp\u00e1rrago blanco almacenados en refrigeraci\u00f3n a 2\u00c2\u00bac y hr de 80-85\u00c2\u00bac y en bolsas polim\u00e9ricas a la misma temperatura. Todo ello encaminado a conocer su calidad y vida \u00fatil, factores de gran inter\u00e9s en la actualidad de cara a la comercializaci\u00f3n de productos frescos. El an\u00e1lisis de la fibra alimentaria, as\u00ed como uno de sus componentes, las sustancias p\u00e9cticas, se ha realizado con metodolog\u00edas que han sido validadas previamente a su aplicaci\u00f3n a las muestras vegetales. Las condiciones de ensayo han conseguido ampliar en gran medida la vida comercial de estos vegetales, principalmente de los envasados en atm\u00f3sfera codificada, a 48, 37 y 21 d\u00edas en el caso del br\u00e9col, coles de bruselas y esp\u00e1rragos blanco respectivamente. el tratamiento estad\u00edstico de los datos ha permitido una discusi\u00f3n de los resultados de gran inter\u00e9s. Finalmente se ha profundizado en los aspectos relativos a la mejora de la vida \u00fatil de br\u00e9col mediante el estudio de la relaci\u00f3n de la tasa respiratoria, la s\u00edntesis de etileno y la expresi\u00f3n de los genes y formaci\u00f3n de 1-aminociclopropano-1-carboxilato (acc) sintetasa y acc oxidasa, con la senescencia postcosecha.
