La callidad de estos productos est\u00e1 lejos de la que se obtiene con masas frescas, debido a la sensibilidad de las cepas comerciales de s. Ceremisiae al proceso de congelaci\u00f3n as\u00ed como a las altas presiones osm\u00f3ticas. En el primer cap\u00edtulo de esta tesis se estudia la posible utilizaci\u00f3n de cepas de torulaspora delbrueckii capaces de fermentar una masa panaria y que presentan caracter\u00edsticas intr\u00ednsecas de criorresistencia y osmotolerancia. Los resultados obtenidos en este cap\u00edtulo muestran que una cepa de esta especie, la cepa pycc5321 muestra una elevada tolerancia a estr\u00e9s osm\u00f3tico e i\u00f3nico por lo que proponemos a esta cepa como modelo de estudio de tolerancia a estr\u00e9s en levadura de panader\u00eda. En el cap\u00edtulo ii se describe la obtenci\u00f3n de las herramientas moleculares necesarias para poder trabajar con esta cepa en el laboratorio.  en el cap\u00edtulo iii de este trabajo se describe el aislamiento de la prote\u00edna tdhog1 de esta cepa, as\u00ed como la caracterizaci\u00f3n de la ruta h0g, principal ruta implicada en resistencia a estr\u00e9s osm\u00f3tico eus. Cerevisiae en esta especie. En este cap\u00edtulo se muestra tambi\u00e9n el aislamiento de los genes de t. Delbrueckii tdena1 y tdcrz1, hom\u00f3logos, respectivamente, a un gen que codifica para la atp-0sa ena1 de s. Cerevisiae y otro que codifica para un factor transcripcional, crzi, implicado en la regulaci\u00f3n de ena1, as\u00ed como la caracterizaci\u00f3n de la ruta de la calcineurina-crz1p en t.
