Se han desarrollado diversos metodos ce-ms que permite la determinaci\u00f3n de prote\u00ednas b\u00e1sicas para la diferenciaci\u00f3n de especies y la detecci\u00f3n de adulteraciones a trav\u00e9s de la determinaci\u00f3n de lisozima en alimentos. Se ha combinado el uso de un m\u00e9todo de extracci\u00f3n limpio, como la extracci\u00f3n presurizada con agua, con el acoplamiento ce-ms para el estudio de las principales ficobiliprote\u00ednas procedentes de la microalga spirulina platensis. Se ha desarrollado un nuevo procedimiento metodol\u00f3gico para el estudio de mapas pept\u00eddicos que consiste en el uso combinado de un programa de simulaci\u00f3n de migraci\u00f3n de p\u00e9ptidos mediante ce y el acoplamiento ce-esi-ms. Se ha llevado a cabo la cuantificaci\u00f3n mediante ce-esi-ms y ce-uv del p\u00e9ptido bioactivo gec presente en semillas de la especie vicia narbonensis l.  por ultimo, se ha llevado a cabo el an\u00e1lisis de un grupo de 7 amino\u00e1cidos quirales y 1 amino\u00e1cido aquiral, mediante ce-esi-ms. El nuevo m\u00e9todo se ha aplicado al an\u00e1lisis de los amino\u00e1cidos mayoritarios en zumo de naranja, permitiendo la detecci\u00f3n de la adici\u00f3n de amino\u00e1cidos sint\u00e9ticos
