Una forma de conseguir este tipo de alimentos es a\u00f1adiendo un ingrediente funcional como la fibra. un tipo de fibra que cada vez esta m\u00e1s valorada es la fibra de c\u00edtrico por tener un proporci\u00f3n m\u00e1s equilibrada en fibra diet\u00e9tica soluble\/fibra diet\u00e9tica total. El objetivo general de la presente tesis ha sido investigar el potencial de utilizaci\u00f3n de diferentes tipos de fibra de origen c\u00edtrico (albedo y extractos de fibra procedentes de los subproductos de las industrias de zumos) en la elaboraci\u00f3n de productos c\u00e1rnicos frescos y crudo-curados (no fermentados). Los productos a los que se les a\u00f1adieron los diferentes tipos de albedo y fibras de c\u00edtrico fueron: longaniza de pascua, salchichas de desayuno tipo ingl\u00e9s, alb\u00f3ndigas
