Se ha caracterizado la cin\u00e9tica del proceso en l\u00e1minas de papaya y se ha analizado el efecto de los tratamientos, hasta alcanzar 20 \u00c2\u00babrix y la fase l\u00edquida de la fruta, sobre propiedades fisicoqu\u00edmicas, \u00f3pticas, mec\u00e1nicas, tasa de respiraci\u00f3n y carga microbiana.     del estudio cin\u00e9tico se deduce que la propiedad efectiva de transporte del tejido de papaya y el rendimiento del proceso aumentan cuando se utiliza la disoluci\u00f3n osm\u00f3tica m\u00e1s diluida y cuando se aplica pulso de vac\u00edo en presencia de calcio en la disoluci\u00f3n. Desde este punto de vista, los tratamientos m\u00e1s recomendables ser\u00edan con la disoluci\u00f3n de 45 \u00c2\u00babrix, aplicando un pulso de vac\u00edo y adicionando calcio. Los tratamientos osm\u00f3ticos comportaron cambios en la transparencia, luminosidad y pureza de color de las muestras cuando se aplic\u00f3 pulso de vaci\u00f3, pero no se observan cambios notables debidos a otros factores. Del estudio de las propiedades mec\u00e1nicas se deduce que para preservar mejor la textura, se debe tratar a la papaya con disoluciones poco concentradas, con calcio y a presi\u00f3n atmosf\u00e9rica. Estos aspectos hacen recomendables los tratamientos a presi\u00f3n atmosf\u00e9rica, con calcio y con 45 \u00c2\u00babrix.     los tratamientos osm\u00f3ticos implicaron cambios en la pauta respiratoria del tejido de papaya, dependiendo de las condiciones de operaci\u00f3n. Los tratamientos con pulso de vac\u00edo implican mayor restricci\u00f3n al transporte de ox\u00edgeno dando lugar a mayores valores del coeficiente respiratorio y a una mayor potenciaci\u00f3n de las rutas anaerobias.
