El proceso de purificaci\u00f3n de enzimas ha abarcado etapas de centrifugaci\u00f3n, ultrafiltraci\u00f3n y cromatograf\u00edas de intercambio i\u00f3nico, interacci\u00f3n hidrof\u00f3bica  y filtraci\u00f3n en gel, considerando su escalado hasta el nivel preparativo de planta piloto. El avance del proceso se ha comprobado mediante (sds)page e ief, t\u00e9cnicas que tambi\u00e9n han permitidola determinaci\u00f3n de masas moleculares y los valores de ph isoel\u00e9ctrico de las isoenzimas purificadas, con satisfactoria recuperaci\u00f3n y grado de purificaci\u00f3n.  a partir de los pistilos de alcachofa, se han obtenido tres asp\u00e1rtico proteasas o cinarasas a, b y c. La primera es la m\u00e1s abundante y la segunda presenta la mayor actividad espec\u00edfica. Muestran actividad amidol\u00edtica e inhibici\u00f3n ante pepstatina, intermedias entre pepsina y quimosina. La actividad coagulante de la leche y la actividad proteol\u00edtica sobre case\u00ednas, es similar a la de los cuajos de ternera y microbianos, por lo que pueden tener aplicaci\u00f3n en la elaboraci\u00f3n de cuajadas y quesos.  las br\u00e1cteas de alcachofa contienen peroxidasa cati\u00f3nica en estados penta y hexacoordinados, con distinta proporci\u00f3n de calcio enlazado. Se ha caracterizado la actividad y la estabilidad de esta peroxidasa ante calcio, per\u00f3xido de hidr\u00f3geno y disolventes org\u00e1nicos, optimizando las condiciones de ensayo para sus potenciales aplicaciones biotecnol\u00f3gicas, como an\u00e1lisis cl\u00ednicos (glucosa, colesterol, inmunoensayos para virus, etc.), Degradaci\u00f3n de contaminantes fen\u00f3licos y s\u00edntesis de resinas fen\u00f3licas.  tambi\u00e9n a partir de br\u00e1cteas de alcachofa, se ha purificado tirosinasa o polifenoloxidasa, caracterizando sus actividades monofenolasa y difenolasa. la enzima
