En primer lugar se abordan pruebas para determinar la calidad de los aceites objeto de estudio (insaponificable, contenido en ceras e indice de polifenoles totales), y en segundo lugar conocer las caracteristicas antioxidantes de los mismos, para lo cual se determino el contenido en escualeno y beta caroteno, que revisten gran importancia a pesar de encontrarse en bajas concentraciones. Posteriormente se ponen a punto diferentes metodos de medida de la capacidad antioxidante por medio de medidas espectrofotometricas y fluorimetricas (abts, dpph, orac y betacaroteno\/linoleico). Por ultimo se abordo el estudio de los componentes antioxidantes del aceite en muestras de plasma humano a partir de voluntarios sanos<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
