Las identidades y purezas de estos pigmentos fueron confirmadas por hplc con detecci\u00f3n de fotodiodos y masas. se analiz\u00f3 la actividad antioxidante de los antocianos m\u00e1s abundantes del vino tinto y de sus correspondientes vitisinas a. En este trabajo, todos los antocianos analizados presentaron mayor actividad antioxidante que sus correspondientes vitisinas a, medida como la capacidad que presentan dichos compuestos para reducir el ion ferrico a ion ferroso (m\u00e9todo frap) y de capturar los radicales abts.+ (M\u00e9todo teac), peroxilo (orac), super\u00f3xido e hidroxilo (espectrometr\u00eda de resonancia de esp\u00edn de electr\u00f3n).  se estudi\u00f3 el efecto que estos pigmentos presentaban en la producci\u00f3n de \u00f3xido n\u00edtrico y en la secreci\u00f3n del factor de necrosis tumoral ? (Tnf- ?) En c\u00e9lulas monocitos macr\u00f3fagos, en la agregaci\u00f3n plaquetaria inducida con col\u00e1geno y en la secreci\u00f3n de prote\u00edna quimiot\u00e1ctica de monocitos (mcp-1) y de mol\u00e9culas de adhesi\u00f3n celular (intercelular, icam y vascular, vcam) en c\u00e9lulas endoteliales humanas (huvec).  Ninguno de los antocianos y vitisinas a analizadas presentaron efecto sobre la producci\u00f3n de \u00f3xido n\u00edtrico y la agregaci\u00f3n plaquetaria. Si se observ\u00f3 un incremento de la producci\u00f3n de tnf- ? En las c\u00e9lulas monocitos tratadas con estos compuestos. Los antocianos mostraron mayor actividad biol\u00f3gica sobre las c\u00e9lulas huvec que sus correspondientes vitisinas a, siendo capaces de inhibir la secreci\u00f3n de mcp-1, vcam-1 y icam-1, mientras que las vitisinas a s\u00f3lo inhibieron significativamente la secreci\u00f3n de vcam-1.   se realiz\u00f3 un estudio de absorci\u00f3n y metabolismo de antocianos en humanos despu\u00e9s de
