Se ha analizado la evoluci\u00f3n de diferentes par\u00e1metros f\u00edsico-qu\u00edmicos como peso seco, s\u00f3lidos solubles, ph, prote\u00ednas y pigmentos. Se ha estudiado la evoluci\u00f3n en el contenido en capsicinoides a lo largo del desarrollo del fruto as\u00ed como de otros metabolitos secundarios relacionados consider\u00e1ndose tambi\u00e9n el efecto de las variaciones estacionales y las modificaciones espaciales. Se ha observado que en capsicum annuum l.Var.Annuum, los capsicinoides presetan un patr\u00f3n de acumulaci\u00f3n similar al de otras variedades, si bien sus niveles son sensiblemente inferiores. Se ha detectado la presencia de capsicinoides en \u00f3rganos vegetativos de plantas adultas, sugiri\u00e9ndose su posible relaci\u00f3n con el proceso de senescencia. Se ha analizado la influencia de factores abi\u00f3ticos (fertilizaci\u00f3n y estr\u00e9s h\u00eddrico) en el metabolismo fenilpropanoide. por \u00faltimo, dada la capacidad de las peroxidasas de oxidar la capsicina, se ha estudiado el patr\u00f3n de actividad peroxidasa en frutos analiz\u00e1ndose las modificaciones que aparecen en la expresi\u00f3n de las diferentes ioenzimas consecuencia
