La mayor limitaci\u00f3n al desarrollo de estos procesos deriva de los elevados costos asociados a la extracci\u00f3n de la beta-galactosidasa de levaduras por se intracelular. Se intent\u00f3 una reducci\u00f3n del costo de la preparaci\u00f3n enzim\u00e1tica mediante diferentes estrategias: la primera de ellas consisti\u00f3 en el desarrollo de cultivos en fase s\u00f3lida, consiguiendo una mejora de un 152% en el rendimiento de producci\u00f3n de dicha enzima en relaci\u00f3n con los cultivos l\u00edquidos; la segunda estrategia fue el desarrollo de un sistema recombiante que promov\u00eda la secrecci\u00f3n de la beta-galactosidasa de kluyveromyces lactis, hasta un 50%, a trav\u00e9s de modificaciones gen\u00e9ticas, paralelamente se utilizaron mutantes de saccharomyces cerevisiae que lisan a temperaturas no permisivas, obteniendo un porcentaje de liberaci\u00f3n enzim\u00e1tica al medio de cultivo de un 93-83%, y mutantes super-secretores que mantuvieron los porcentajes de secreci\u00f3n en torno al 10% durante m\u00e1s de 100 horas. Mediante ingenier\u00eda gen\u00e9tica se indujo la capacidad de crecimiento en lactosa cepas de s.
