Carmen <\/strong><\/h2>\n<p>Se han estudiado las caracter\u00edsticas de 21 mohos aislados de jam\u00f3n ib\u00e9rico previamente identificados como penicillium aurantiogriseum. Su morfolog\u00eda en medios generales (agar extracto de malta -mea- y agar czapek extracto de levadura -cya-) y espec\u00edficos para penicillium (a base de creatina y sacarosa) permiti\u00f3 diferenciar 5 grupos de aislamientos, de los que ninguno era p. Aurantiogriseum. S\u00f3lo se pudo identificar un grupo como p. Polonicum, mientras que los dem\u00e1s mostraron caracter\u00edsticas comunes a diversas especies. el an\u00e1lisis de los metabolitos secundarios producidos por los aislamientos incubados en mea , cya, jam\u00f3n, extracto con carne con 4% de naci, arroz y extracto de arroz se realiz\u00f3 mediante cromatograf\u00eda en capa fina (tlc), cromatograf\u00eda de l\u00edquidos de alta presi\u00f3n con detector de bater\u00eda de diodos(hplc-pda) y de masas (hplc-ms). Los perfiles de metabolitos confirmaron la identificaci\u00f3n de p. Polonicum (\u00e1cidos penic\u00edlico y terr\u00e9strico, verrucofortinas, verrucosidinas, viridicatinas y ciclopeninas) y permitieron la de los otros grupos como p. Commune (ac. Ciclopiaz\u00f3nico y rugulovasinas), p. Solitum (compactinas, ciclopeninas y viridicatinas) y p. Echinulatum(perechinas, ciclopeninas y viridicatinas). En jam\u00f3n se observaron la mayor\u00eda de los metabolistos producidos en los dem\u00e1s medios de cultivo. La toxicidad de los extractos f\u00fangicos se evalu\u00f3 frente a artemia salina y c\u00e9lulas vero, siendo la primera de estas pruebas m\u00e1s sensible para p. Polonicum y p. Solitum y la segunda para p. Solitum y p. Commune. El perfil de prote\u00ednas totales (estudiado por electroforeis en gel de poliacrilamida) var\u00eda tras la esporulaci\u00f3n. las caracter\u00edsticas genot\u00edpicas se estudiaron mediante dos variantes de la reacci\u00f3n en cadena de la polimerasa(pcr). El cebador (gaca) permiti\u00f3 diferenciar mediante pcr fingerprinting todos los grupos, incluso entre cepas pertenecientes a la misma especie.
