Jes\u00fas <\/strong><\/h2>\n<p>La necesidad de un control toxicologico, sanitario y legal de aditivos alimentarios requiere metodos analiticos fiables y sensibles. Los aditivos estudiados han sido los potenciadores del sabor acido inosinico y maltol, y la nitrosamina n-nitrosopiperidina, que si bien no es un aditivo se puede formar a partir de los nitritos utilizados como conservantes. Para su determinacion se han puesto a punto tecnicas electroquimicas de analisis que han permitido su identificacion y cuantificacion en alimentos, estudiandose previamente el comportamiento electroquimico del acido inosinico y de la n-nitrosopiperidina sobre el electrodo de mercurio y del maltol sobre el electrodo de carbono vitrificado. En base a dicho comportamiento se ha puesto a punto distintos metodos analiticos, que han permitido su determinacion en muestras reales. Asi el acido inosinico se ha determinado por voltamperometria de adsorcion-redisolucion, utilizando en la etapa de barrido la polarografia de impulsos reversible en muestras de sopas deshidratadas.  para la n-nitrosopiperidina se ha propuesto un metodo de separacion mediante cromatografia liquida con deteccion amperometrica en reduccion, mientras que para el amltol se ha utilizado el mismo metodo en oxidacion aplicandolos posteriormente a muestras de cerveza y bolleria.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral \u00ab<strong>Determinacion electroanalitica de aditivos alimentarios.<\/strong>\u00ab<\/h3>\n<ul>\n<li><strong>T\u00edtulo de la tesis:<\/strong>\u00a0 Determinacion electroanalitica de aditivos alimentarios. <\/li>\n<li><strong>Autor:<\/strong>\u00a0  Portela Del Rio M.
