Se demostr\u00f3 la aptitud de estos medios para la producci\u00f3n de bacteriocinas. Se defini\u00f3 una estrategia para su adecuaci\u00f3n, que comprende la desproteinizaci\u00f3n a ph \u00e1cido y tratamiento con calor del suero l\u00e1cteo, y en el caso de los epm pretratados, el tratamiento se complement\u00f3 adem\u00e1s con la hidr\u00f3lisis enzim\u00e1tica total del gluc\u00f3geno. -se estudi\u00f3 el efecto de las fuentes de nitrogeno (glicina), fosforo (kh2po4), carbono (glucosa para epm (medio 0,5 mh) y lactosa para el suero) y de concentraci\u00f3n inicial de tamp\u00f3n, destac\u00e1ndose la inadecuaci\u00f3n de los suplementos utilizados y la dependencia directa de la bios\u00edntesis de estos antibioticos con el gradiente de ph generado en el cultivo, siempre que no se sobrepase en el caso de la nisina, un valor umbral de ph, a partir del cual se deprime la produccion.- Se estudi\u00f3 la influencia de diferentes fuentes de nitrogeno (extracto de levadura, casitona,nh4c1 y glicina), demostrandose la influencia positiva de las dos primeras.- Con la utilizaci\u00f3n de cultivos sobre medio 0,5 mh, realcalinizados y realimentados, se increment\u00f3 el periodo activo y se superaron las producciones de bacteriocinas, obtenidas sobre el medio mrs.- Se propuso un modelo que modifica el de luedeking y piret, incorporando las variables gradiente de ph(ph), velocidad de consumo de nitrogeno (nisina) o f\u00f3sforo (pediocina) y ph umbral y que predice de manera satisfactoria, las producciones obtenidas sobre medio 0,5 mh, cuando se utiliza esta modalidad de cultivo.-Se estudio estabilidad de la nisina, pediocina y del nisapl\u00edn (preparado comercial de la nisina) frente a la temperatura y del ph, demostrandose su elevada termoestabilidad y aciodorresistencia.- Se demostr\u00f3 su elevada sensibilidad frente a enzimas
