As\u00ed, se llevan a cabo estudios macrosc\u00f3picos y microsc\u00f3picos del comportamiento de sistemas reales con c\u00e9lulas inmovilizadas. Como muestra de sistema sincrecimiento, se considera la fermentaci\u00f3n malol\u00e1ctica de sidra, empleando la bacteria leuconostoc oenos inmovilizada en alginato.  tamb\u00eden se estudia un sistema en el que tiene lugar crecimiento celular durante la fermentaci\u00f3n: la bacteria serratia marcescens inmovilizada en alginato y crecida en suero l\u00e1cteo. Asimismo, se analiza el comportamiento de este sistema, c\u00e9lula-sustrato, con c\u00e9lulas libres, se consideran distintas posiblidades de inmovilizaci\u00f3n para esta bacteria y se estudian las propiedades difusionales de una prote\u00edna l\u00e1ctica en el soporte de alginato. Respecto a la modelizaci\u00f3n, se desarrollan modelos de aplicaci\u00f3n general que incluyen procesos de difusi\u00f3n, reacci\u00f3n y fuga celular.  se resuelven, comparando los resutlados obtenidos con datos experimentales y se propone, en base a las observaciones realizadas en los sistemas reales, la consideraci\u00f3nd e determinados fen\u00f3menos para modelos
