{"id":81163,"date":"1999-09-11T00:00:00","date_gmt":"1999-09-11T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/la-variacion-en-el-contenido-de-ceras-y-alcoholes-grasos-en-el-aceite-de-oliva-durante-la-desodorizacion\/"},"modified":"1999-09-11T00:00:00","modified_gmt":"1999-09-11T00:00:00","slug":"la-variacion-en-el-contenido-de-ceras-y-alcoholes-grasos-en-el-aceite-de-oliva-durante-la-desodorizacion","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/la-variacion-en-el-contenido-de-ceras-y-alcoholes-grasos-en-el-aceite-de-oliva-durante-la-desodorizacion\/","title":{"rendered":"La variacion en el contenido de ceras y alcoholes grasos en el aceite de oliva durante la desodorizacion."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Mohamed Tubaileh Rama <\/strong><\/h2>\n<p>La nueva tecnolog\u00eda de obtenci\u00f3n de aceite de oliva virgen mediante decantadores de dos fases, permite una segunda centrifugaci\u00f3n de las pastas que da lugar a aceites industrial de aceites, procedentes de segunda centrifugaci\u00f3n de pastas almacenadas, presenta grandes problemas por aumentar su contenido en ceras por encima de lo legislado por la u.E.  por ello se han realizado ensayos de refinaci\u00f3n f\u00edsica de aceites de oliva virgen lampante en planta piloto discontinua de 200 kg de capacidad y utilizando un plan de experiencias 2 c\u00fabico centrado para estudiar la formaci\u00f3n de ceras durante el proceso.  los resultados obtenidos indican que en la refinaci\u00f3n qu\u00edmica discontinua las ceras incrementan ligeramente durante la depuraci\u00f3n y neutralizaci\u00f3n de los aceites y grandemente durante el calentamiento de los aceites decolorados para su desodorizaci\u00f3n en la refinaci\u00f3n f\u00edsica el incremento de ceras tiene lugar s\u00f3lo durante el calentamiento  previo a la desodorizaci\u00f3n, en todos los casos, hay disminuci\u00f3n de ceras totales en los aceites. Se han estimado los constantes cin\u00e9ticas de alteraci\u00f3n del enlace ester de todas y cada una de las ceras lineales de los aceites de oliva durante su
