Jose <\/strong><\/h2>\n<p>Actualmente est\u00e1n cobrando mucho inter\u00e9s los estudios sobre la relaci\u00f3n vino y salud, pues se ha demostrado epidemiol\u00f3gicamente que beber vino de forma moderada y habitual alarga la esperanza de vida y reduce la mortalidad por enfermedades cardiovasculares. Se ha establecido que las sustancias del vino que ejercen este efecto protector son las procianidinas. En base a estos antecedentes, el objetivo de esta tesis es el estudio de la biodisponibilidad de estos compuestos activos del vino, con la consiguiente puesta a punto de la metodolog\u00eda necesaria de extracci\u00f3n y separaci\u00f3n de los polifenoles de los flu\u00eddos y materiales biol\u00f3gicos de origen animal y tambien de una matriz vegetal rica en \u00e9stos(las pepitas de uva).  extraccion y separacion de las procianidinas.  en el proceso de extracci\u00f3n de las procianidinas de las pepitas de uva, los solventes probados fueron el metanol, el etanol i la acetona (la capacidad de los dos primeros para extraer polifenoles totales era superior a la de la acetona; a parte, el metanol podria aislar m\u00e1s cantidad de taninos condensados que el etanol i la acetona). Los metodos de separaci\u00f3n utilizados fueron la cromatografia en columna con los geles poliamida y sephadex lh-20 (no se pudieron obtener fracciones puras de los diferentes olig\u00f3meros de las procianidinas), la cromatografia en capa fina (permetia separar hasta el grado de hex\u00e1meros de las procianidinas, pero no podia diferenciar entre compuestos del mismo grado de condensacion) i el hplc en fase reversa con detecci\u00f3n ultraviolada-visible de diodos integrados (se consigui\u00f3 separar e identificar los diferentes tipos de procianidinas de las pepitas hasta el grado de tetr\u00e1meros).  la incubaci\u00f3n delos compuestos fen\u00f3licos con los flu\u00eddos o los materiales biol\u00f3gicos animales, se realizaba a temperatura ambiente, durante 30 minutos. en este caso, se ensayaron solo el metanol y el etanol como solventes extractores, mezclados ahora con tr<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral \u00ab<strong>Identificacion y transporte plasmatico de las procianidinas del vino.<\/strong>\u00ab<\/h3>\n<ul>\n<li><strong>T\u00edtulo de la tesis:<\/strong>\u00a0 Identificacion y transporte plasmatico de las procianidinas del vino. <\/li>\n<li><strong>Autor:<\/strong>\u00a0  Brunet Reverte M.
