La lipasa novozyum 435 (novo nordisk) de candida antartica es utilizada para catalizar la reacci\u00f3n en la que se estudian la influencia sobre el grado de esterificaci\u00f3n y el rendimiento en triglic\u00e9ridos de diversas variables. un dise\u00f1o experimental estad\u00edstico paso de manifiesto que ls variables m\u00e1s imfluyentes son: la cantidad de enzima al contenido de agua, la temperatura y la relaci\u00f3n glicemia\/\u00e1cidos grasos. Las condiciones \u00f3ptimas para la s\u00edntesis son: 50,0 mg de glicemina\/400 mg de pufas (relaci\u00f3n 1,2:3 mol\/mol); 100 mg de pipasa n-435; 9 ml de hexano, sin adici\u00f3n de agua; 50\u00c2\u00bac; 1g de tramia moleculares a\u00f1adidos  al inicio de la reacci\u00f3n para absorber el agua formada durante la esterificaci\u00f3n, agitaci\u00f3n de 200 rpm, atm\u00f3sfera de arg\u00f3n y &#8212; de esterificaci\u00f3n de 96 h.  bajo estas condiciones y a partir de diferentes fuentes de pufas, se han obtenido grados de esterificaci\u00f3n mediod del 96% y rendimientos en triglic\u00e9ridos medios del 94% . La composici\u00f3n en \u00e1cidos grasos de los triglic\u00e9ridos sintetizados reproducen pr\u00e1cticamente la de la fuetne de pufas utilizada.As\u00ed se hanobtendio triglic\u00e9ridos con un 81% de pufas n-3 a partir de concentrados de pufas de aceite de h\u00edgado de bacalao, con un 42% de epa a partir de pufas de la biomasa de la microalga marina phaesdactyhum tricor&#8211; y trigliciridos con un 46% de epa y un 43% de \u00e1cido ara&#8211;a partir de la microalga, marian &#8212;  &#8211;. Variando elperfil de la fuente de \u00e1cidos grasos utilizada, es posible obtener triglic\u00e9ridos ricos en pufas con la composici\u00f3n  deseada y con altos
