Durante el periodo de rapido crecimiento del grano de uva los distintos componentes cuticulares van poco a poco desarrol\u00e1ndose. El grano tambien se va enriqueciendo tanto cualitativa como cuantitaviamente de distintos componentes moleculares.  la estructura molecular de las ceras epicuticulares de grano de uva consta dedos dominios bien diferenciados: una zona de elevada crsitalinidad constituida por compuestos alifaticos y una segunda zona con un agrupamiento molecular menos ordenado, constituida por el acido oleanolico. Los coeficientes de difusi\u00f3n obtenidos para el \u00e1cido olean\u00f3lico revelaron un denso empaquetamiento en la zona menos ordenada de las ceras que dificultar\u00eda la movilidad de compuestos a trav\u00e9s de ella. El estudio te\u00f3rico llevado a cabo mediante modelizaci\u00f3n molecular dela geometr\u00eda que adopta el \u00e1cido olean\u00f3lico indican la existencia de cierto ordenamiento molecular del mismo.  los valores obtenidos de capacidad calor\u00edfica espec\u00edfica de ceras y cut\u00edcula de grano de uva son muy elevados indicando esto la presencia de importantes caracter\u00edsticas
