{"id":8159,"date":"1995-01-01T00:00:00","date_gmt":"1995-01-01T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/1995\/01\/01\/incidencia-de-lesiones-y-dictamenes-emitidos-en-la-inspeccion-de-carne-de-porcino-de-cebo\/"},"modified":"1995-01-01T00:00:00","modified_gmt":"1995-01-01T00:00:00","slug":"incidencia-de-lesiones-y-dictamenes-emitidos-en-la-inspeccion-de-carne-de-porcino-de-cebo","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-medicas\/incidencia-de-lesiones-y-dictamenes-emitidos-en-la-inspeccion-de-carne-de-porcino-de-cebo\/","title":{"rendered":"\u00abincidencia de lesiones y dictamenes emitidos en la inspeccion de carne de porcino de cebo\u00bb."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Guillermo Cubero Martin <\/strong><\/h2>\n<p>Con el fin de conocer con precision las lesiones que se pueden encontrar en la inspeccion postmorten en el ganado porcino, tanto en canales como en despojos, asi como saber a que dictamenes dan lugar, se ha procedido a la inspeccion detallada, en el matadero de mercazaragoza, segun sistematica expuesta en la directiva 91\/497\/ce de 661 cerdos de cebo (71 partidas) en el periodo 1991-92 el organo mas afectado fue el pulmon que presento algun tipo de lesion en el 93,7% de los casos, seguido de los ri\u00f1ones (44,48%), del higado (22,85%) y del bazo (19,21%). En el canal se encontro algun tipo de lesion en el 15,18% de los animales, siendo la mas frecuente la pleuritis costal (13.3%) las lesiones encontradas mas frecuentemente fueron neumonia enzootica (68,84%), congestion y edema pulmonar (49,47%), nefritis intersticial focal no purulenta (28,59%), pleuritis visceral (27,99%), hemorragias en pulmon (19,67%), pleuritis costal y hemorragias e infartos de bazo (13,31%), higado de manchas blancas (13,16%), quistes renales (8,62%), pleuroneumonia (6,05%) y pericarditis (5,90%) se procedio al decomiso total de 5 canales (tres por poliartritis, una por abscesos\/piemia, y una por septicemia) igualmente, y siguiendo los trabajos de harbers y col.  (19991), se han creado unos indices de inspeccion de diversas lesiones y decomisos siendo los de mayor utilidad los siguientes: indice de pleuritis costal, indice de decomiso renal, indice de decomiso de pulmon, indice de patolog\u00eda del pulmon, indice pulmonar de manejo, indice de decomiso de higado e indice total de lesiones. Con ello se pretende poder tomar decisiones en la organizacion de la inspeccion, en la gestion de trabajo en el matadero a para comunicar al ganadero que tiene en su explotacion algun tipo de problema
