Adem\u00e1s, se plantea la posible causa de la variabilidad de los productos del cerdo ib\u00e9rico seg\u00fan la zona de elaboraci\u00f3n y se concluye la dificultad de imitar la alimentaci\u00f3n que el animal recibe en montanera a base del empleo de piensos compuestos.  por otra parte, el consumo de los micronutrientes (alfa y gamma jtocoferoles) que los cerdos ib\u00e9ricos ingieren en la dehesa a partir de bellotas y hierba protege de la oxidaci\u00f3n a las membranas celulares del m\u00fasculo y retrsa la formaci\u00f3n de \u00f3xidos de colesterol.  en un segundo experimento en elq ue se alimenta a porcinos h\u00edbridos comerciales condiferentes mezclas de grasa y dos niveles de vitamina e, se trata de responder qu\u00e9 factores act\u00faan con m\u00e1s protagonismo en la oxidaci\u00f3n? \u00c2\u00bfla relaci\u00f3n entre los diferentes \u00e1cidos grasos o el contenido en vitamina e?.  los resultados muestran la improtancia en la oxidaci\u00f3n del m\u00fasculo y membranas celulares de los \u00e1cidos grasos n-3 de cadena larga, y destaca la importante participaci\u00f3n de la vitamina e en la protecci\u00f3n de las membranas. la vitamina e no interacciona con el tipo de grasa utilizado en el m\u00fasculo fresco.
