Este estudio se ha realizado en dos parcelas sitas en la d.O m\u00e9ntrida (toledo). Se ha observado que cada variedad, en los tres a\u00f1os consecutivos estudiados, presente un perfil autoci\u00e1nico caracter\u00edstico y que existe un paralelismo entre el descenso de la acidez del mosto y el contenido de flavanos en las pepitas, lo que permite suponer que la medida de la acidez total del mosto puede ser una herramienta v\u00e1lida para estimar el contenido de flavanos de las uvas en el momento de la vendimia.
