Jes\u00fas <\/strong><\/h2>\n<p>La presente tesis doctoral \u00abcontribuci\u00f3n a la tipificaci\u00f3n anal\u00edtica de mieles gallegas\u00bb constituye un trabajo de investigaci\u00f3n en el que se presenta un intento exitoso de caracterizaci\u00f3n qu\u00edmica y tipificaci\u00f3n quimiom\u00e9trica de las mieles producidas en la comunidad aut\u00f3noma de galicia sujetas a la denominaci\u00f3n \u00abproducto gallego de calidad\u00bb. la primera parte de las investigaciones llevadas a cabo consisti\u00f3 en la puesta a punto de m\u00e9todos anal\u00edticos encaminados a la evaluaci\u00f3n de la calidad anal\u00edtica de la miel y su aplicaci\u00f3n a un numeroso conjunto de muestras. Los resultados obtenidos permiten la evaluaci\u00f3n de la calidad del producto y el grado de cumplimiento de las muestras analizadas de los requerimientos establecidos por la denominaci\u00f3n \u00abproducto gallego de calidad\u00bb. Otro aspecto tratado en el presente trabajo se centra en la evaluaci\u00f3n comparativa del deterioro del producto producido por diversos sistemas de calentamiento (tradicional vs. Microondas). El deterioro se midi\u00f3 mediante la evaluaci\u00f3n de par\u00e1metros tales como el contenido de hidroximetilfurfural, el valor de la actividad enzim\u00e1tica (como \u00edndice de diastasas) y otros. En esta primera parte se alcanzan interesantes conclusiones acerca de los par\u00e1metros anal\u00edticos de calidad de la miel y la influencia del procesado t\u00e9rmico en la misma.  la segunda parte del trabajo en cuesti\u00f3n se centr\u00f3 en la puesta a punto de m\u00e9todos anal\u00edticos basados en la espectroscop\u00eda de absorci\u00f3n y emisi\u00f3n at\u00f3mica con el fin de determinar el perfil met\u00e1lico de las mieles gallegas.
