Dicho trabajo se encuadra en la posibilidad, dada la importancia socio-econ\u00f3mica de la producci\u00f3n de vinos en la zona estudiada, de concienciar y as\u00ed conseguir aumentar la mejora de la calidad y a su vez caracter\u00edsticas peculiares de los vinos considerados. Dichos vinos presentan un grado alcoh\u00f3lico medio &gt; 13% (v\/v), ligeramente superior a lo estipulado por la legislaci\u00f3n. Estos vinos tienen adem\u00e1s unos valores medios de ph y de acidez total normales, y una concentraci\u00f3n de az\u00facares que los sit\u00faa en la catalogaci\u00f3n de vinos secos mayoritariamente. adem\u00e1s los valores elevados de ac\u00eddez vol\u00e1til acetadeh\u00eddo y acetato de etilo, unidos a los bajos niveles de sulfuroso libre, indicar\u00edan que se trata de unos vinos sometidos a elevadas tasas de oxidaci\u00f3n y por tanto de corta vida comercial, como se puso de manifiesto en el an\u00e1lisis sensorial posterior.#<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
