La aplicaci\u00f3nde altas presiones redujo considerablemente, m\u00e1s cuanto mayor es el nivel de presi\u00f3n empleado, la carga microbiana y la actividad autol\u00edtica del m\u00fasculo, existiendo variaci\u00f3n dependiendo de la forma de aplicaci\u00f3n de la presi\u00f3n (continua u oscilatoria). De esta manera, se consigui\u00f3 prolongar considerablemente la vida \u00fatil del m\u00fasculo conservado en estado refrigerado. No se observaron efectos de ablandamiento con la aplicaci\u00f3n de la presi\u00f3n, si bien, el m\u00fasculo presurizado mostr\u00f3 un menor exudado durante un calentamiento progresivo hasta temperaturas de cocci\u00f3n. Los cambios f\u00edsicos observados con la presi\u00f3n se ven correlacionados con modificaciones a nivel morfol\u00f3gico. Por otro lado se caracteriz\u00f3 el sistema proteol\u00edtico del m\u00fasculo del brazo del pulpo, observ\u00e1ndose dos m\u00e1ximos de actividad a 40 grados c, con un ph \u00f3ptimo a 2,5 y 4,0 respectivamente . las proteinasas mayoritariamente resultaron ser asp\u00e1rtico-proteinasas y ciste\u00edn-proteinasa mayoritariamente.
