Lote i o estresado: los terneros una vez en matadero permanecen reagrupados con animales desconocidos por 19-18 horas antes del sacrificio. Lote ii o testigo:  terneros sacrificados inmediatamente tras su llegada a matadero. En todos ellos se toman muestras antes del estres y en el momento del sacrificio.  se realizan determinaciones hematologicas (concentracion de hemolglivina, valor hematocritoy formula leucocitaria), bioquimicas (proteinas torales, albmina, globulinas, gluscosa, colesterol, urea, creatinina, acido lactico, ch, ldh, ast, alt, cloro, sodio, potasio, magnesio, fosforo y calcio) y homonales (cortsol en lasma y rona, endorfina plasmatica y metabolitos de aminas biogenas: mhpg, dopach, hva, 5-hiaa y vma). Se analiza la concentracion de glucogeno en los musculos longissimus dorsi, esternomandibular, recto interno y diafragma y se mide ee ph final en musculo longidssimus 24 horas post-scrificio.  el manejo aplicado a los animales del lote ii supone un importante estres fisico y psiquico como lo demuestran las mutiples modificaciones observadas en los indices directos e indirectos de estres evaluados (incrementod en hemoglobina y hematocrito e inversion de formula leucocitaria; aumentos significativos en la concentracion de pt, glucosa, colesterol, urea, creatina, ac. Lactico, enzimas musculares, cortiso en plasma y orina y 5-hiaa.  en general, la respusta de estres manifestada por los terneros ha sido muy similar en las razas estudiadas.
