Lactis productoras y no productoras de nisina en la elaboraci\u00f3n de queso fesco de cabra y el empleo directo de esta bacteriocina. previamente se han realizado estudios de cmi (concentraci\u00f3n m\u00ednima inhibitoria) para la nisina, sola y en combinaci\u00f3n con \u00e1cido l\u00e1ctico en caldos y en leche a distintas temperaturas estableciendo lo que hemos denominado cmie (concentraci\u00f3n m\u00ednima inhibitoria estable) calculados a tiempos que corresponden a la vida \u00fatil de los alimentos estudiados y la nisina residual. Las aplicaciones estudiadas se centran                en tres bloques: -la inhibici\u00f3n de listeria monocytogenes. -Estudios metab\u00f3licosde las cepas de lactococcus lactis subsp. Lactis, tanto del metabolismo primario como de producci\u00f3n de nisina. -las modificaciones de caracteres f\u00edsicos (textura, color,&#8230;) Y sensoriales. Se ha cuantificado la incidencia de listeria monocytogenes en leche cruda de cabra en la regi\u00f3n de murcia, alcanzando una positividad en las muestras superior al 30% con unos niveles m\u00e1ximos de 3,49 104 ufc\/ml en medio palcam. Se han situado los valores colorim\u00e9tricos de los quesos frescos elaborados con leche de distintas especies, siendo posible la discriminaci\u00f3n colorim\u00e9trica en el 100% de las muestras mediante el an\u00e1lisis del color por reflexi\u00f3n mediante el uso de los par\u00e1metros a* y habdel espacio cielab, los valores del \u00edndice de amarillez (yi) del espacio cie de car\u00e1cter adimensional, sit\u00faa a los quesos frescos de cabra en 16, los de vaca en torno a 20 y a los de oveja en 25 con los datos del color\u00edmetro, aunque existen variaciones estacionales. igualmente se ha analizado la posible correlaci\u00f3n entre desarrollo de color superficial y proliferaci\u00f3n microbiana, habi\u00e9ndose encontrado altos valores.
