Los cultivos celulares presentaron una aculumaci\u00f3n de compuestos fen\u00f3licos m\u00e1xima durante las primeras etapas de la fase de crecimiento exponencial, se han identificado (+)-catequina y 1-o-cumaroil-b- d-glucosa. Se determinaron los niveles de \u00e1cido fer\u00falico soluble, con un m\u00e1ximo contenido que coincide temporalmente con los m\u00e1ximos niveles del 1-o-feruloil-b-d-glucosa y de la actividad b-glucosidasa. la b-glucosidasa de callo de fresa fue capaz de hidrolizar in vitro al \u00e9ster con la consiguiente formaci\u00f3n de \u00e1cido fer\u00falico libre. Al final de la fase de senescencia se produce una disminuci\u00f3n del contenido de \u00e1cido fer\u00falico libre, coindicente con un aumento de la concentraci\u00f3n de \u00e1cido fer\u00falico ligado a la pared celular. Se ha puesto a punto un m\u00e9todo de medida de la activiad b-glucosidasa basado en el m\u00e9todo cl\u00e1sico de hidr\u00f3lisis del p-nitrofenil-b-d-gluc\u00f3sido empleando a-ciclodextrina. La actividad b-glucosidasa en las primeras fases del crecimiento del callo se debe a la presencia de un grupo de isoenzimas b\u00e1sicas, mientras que en las fases postexoponencial y de senescencia es debida a isoenzimas de car\u00e1cter \u00e1cido. La actividad polifenoloxidasa present\u00f3 niveles m\u00e1ximos al final de la fase de crecimiento exponencial y coincidente con la disminuci\u00f3n de los niveles de (+)- catequina soluble. Esta actividad enzim\u00e1tica se debe a la expresi\u00f3n de isoenzimas con punto isoel\u00e9ctrico en torno a 7. El pardeamiento generalizado del callo senescente puede deberse a productos de oxidaci\u00f3n enzim\u00e1tica de la (+)- catequina. La actividad peroxidasa alcanz\u00f3 un m\u00e1ximo en la fase exponencial de crecimiento. La actividad peroxidasa espec\u00edfica frente al \u00e1cido fer\u00falico present\u00f3 un m\u00e1ximo en la fase de senescencia.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
