Se realizaron los siguientes estudios: en flores y tallos de br\u00e9col y en hojas de espinaca se determin\u00f3 los efectos de los diferentes m\u00e9todos de procesado industrial (congelaci\u00f3n y enlatado) sobre el contenido de clorofilas y feofitinas. En hojas de espinaca adem\u00e1s, se estudi\u00f3 los efectos en dichos pigmentos del almacenaje en condiciones de refrigeraci\u00f3n semejantes a los hogares. utilizando flores y tallos de br\u00e9col tambi\u00e9n se evaluaron los cambios en dichos pigmentos con el aumento del tiempo de escalado. Adem\u00e1s, en flores y tallos de br\u00e9col se determin\u00f3 los efectos de los diferentes m\u00e9todos de procesado industrial (congelaci\u00f3n y enlatado) as\u00ed como, el aumento del tiempo de escaldado, sobre la composici\u00f3n, y el contenido de \u00e1cidos grasos, de amino\u00e1cidos libres y de vitamina c. Por \u00faltimo tambi\u00e9n se estudi\u00f3 los efectos sobre la actividad peroxidasa. Lleg\u00e1ndose a las siguientes conclusiones m\u00e1s importantes:  el almacenaje de espinacas crudas a temperatura de refrigeraci\u00f3n supone p\u00e9rdidas de clorofilas \u00aba\u00bb y \u00abb\u00bb que hacen al vegetal inaceptable entre los d\u00edas 13 y 15. el escaldado que se aplica en el procesado industrial de congelados origina disminuci\u00f3n de clorofilas \u00aba\u00bb y \u00abb\u00bb. Dicha degradaci\u00f3n estudiada en br\u00e9col aumenta a medida que se incrementa el tiempo de escaldado, por lo que ser\u00eda m\u00e1s recomendable acortar dicho tiempo en la actividad industrial.  los procesados industriales de congelaci\u00f3n y enlatado producen p\u00e9rdida de calidad nutritiva ya que disminuyen los l\u00edpidos y prote\u00ednas tanto en flores como en tallos de br\u00e9col.
