Asimismo se han estudiado los parametros quimicos m\u00e1s representativos de las distintas fracciones: alcoholica, acida, mineral y volatil, junto a los polifenoles y el color de los vinos resultantes de los procesos mencionados. Los resultados del estudio reflejan los efectos de los diferentes procesos sobre la microbiotica de levaduras y los cambios sobre los parametros fisioqu\u00edmicos de los vinos obtenidos.  el tratamiento termico (85\u00c2\u00bac\/30 min) esteriliza el mosto, pudiendo realizarse una fermentaci\u00f3n controlada en los tres procesos con cepas de la especie saccharomyces ellipsoideus dada su predominio, capacidad de implantaci\u00f3n, y poder alcohol\u00edgeno elevado.  el analisis de las familias fen\u00f3licas ha posibilitado identificar el metodo anot\u00e9cnico utilizado para la
