Valencia.  dichas fases son: el desfangado, se ha estudiado el desfangado est\u00e1tico y por filtro rotativo a vac\u00edo, en segundo lugar la adici\u00f3n de levaduras seleccionadas para llevar a cabo la fermentaci\u00f3n y por \u00faltimo la adici\u00f3n de enzimas pectol\u00edticos en postfermentaci\u00f3n para liberar los compuestos terp\u00e9nicos de gran importancia en la variedad moscatel.
