Los objetivos que se han desarrollado son los siguientes:  1. La obtenci\u00f3n de anticuerpos policlonales y el desarrollo de t\u00e9cnicas inmunoenzim\u00e1ticas para la diferenciaci\u00f3n de salm\u00f3n, trucha y palometa ahumados.  2. La utilizaci\u00f3n de marcadores gen\u00e9ticos y el desarrollo de t\u00e9cnicos gen\u00e9ticas para la diferenciaci\u00f3n de dichas especies de pescado en productos frescos y
