Dichos residuos mostraban un gran potencial de utilizaci\u00f3n como fuente de fibra alimentaria, dando lugar a la producci\u00f3n de suplementos de fibra bajos en lignina y texturalmente aptos para su inclusi\u00f3n en alimentos. Asimismo, la tecnolog\u00eda de extrusi\u00f3n permite la modificaci\u00f3n del contenido y composici\u00f3n de la misma, mejorando sus propiedades f\u00edsico-qu\u00edmicas, y por tanto, sus efectos fisiol\u00f3gicos.  por otro lado y con respecto al contenido en carbohidratos no estructurales presentes en los bulbos de cebolla, se lleg\u00f3 a la conclusi\u00f3n de que constitu\u00edan el mayor componente de la materia seca de la parte interna, destacando el nivel de fructanos de bajo peso molecular, por lo que constituyen una importante fuente de fructanos, a los cuales se atribuyen efectos fisiol\u00f3gicos beneficiosos. Adem\u00e1s, el nivel de fructanos se encuentran relacionado con la capacidad de almacenamiento de las distintas variedades, de tal manera que aquellas variedades caracterizadas por un alto contenido
