Se utilizaron diferntes tecnolog\u00edas de fermentaci\u00f3n entre las que se encuentras procesos de producci\u00f3n de \u00e1cido l\u00e1ctico por etapas secuenciales de sacarificaci\u00f3n y fermentaci\u00f3n y procesos de producci\u00f3n de \u00e1cidol\u00e1ctico en una \u00fanica etapa de sacarificaci\u00f3n y fermentaci\u00f3n. En este \u00faltimo caso se emplearon sistemas con alimentaci\u00f3n simple y sistemas con alimentaci\u00f3n m\u00faltiple tanto de sustrato como de enzimas.  en procesos de sacarificaci\u00f3n y fermentaci\u00f3n simult\u00e1neos con alimentaci\u00f3n m\u00faltiple de sustrato en medios deficientes encelobiasa, se obtuvieron concentraciones de \u00e1cido l\u00e1ctico en el intervalo 48-52.2 g\/l, que pasaron a ser de 68.9 g\/l cuando se suplement\u00f3 el medio con celobiasa con una conversi\u00f3n del sustrato celul\u00f3sico del 76.5%. Estos valores son superiores en un 39-48% a los obtendios en procesos de sacarificaci\u00f3n y fermentaci\u00f3n con alimentaci\u00f3n simple de sustrato.  adem\u00e1s tambi\u00e9n se han evaluado distintas resinas de cambio i\u00f3nico de diferente basicidad, y con distintos i\u00f3nes iniciales sustituyentes para la recuperaci\u00f3n de \u00e1cido l\u00e1ctico a partir de medios de sacarificaci\u00f3n y fermentaci\u00f3n simult\u00e1neos. Los mejores resultados se han obtendio con la resina amberlita ira 67 en forma cloruro, que present\u00f3 una capacidad de cambio i\u00f3nico de 0.262-0.281 g \u00e1cido l\u00e1ctico\/g resina a que mantuvo constante tras varios ciclos de carga-regeneraci\u00f3n permitiendo recuperaciones de producto pr\u00e1cticamente cuantitativas.  con el fin de disminuir el efecto inhibidor del \u00e1cido l\u00e1ctico sobre el proceso de sacarificaci\u00f3n y fementaci\u00f3n simult\u00e1neo, se realizaron experimentos de recuepraci\u00f3nd e \u00e1cido l\u00e1ctico por cambio i\u00ednico a lo lardo
