{"id":84743,"date":"2018-03-10T00:09:03","date_gmt":"2018-03-10T00:09:03","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/desarrollo-y-estabilidad-de-biofilms-de-pseudomonas-de-origen-alimentario\/"},"modified":"2018-03-10T00:09:03","modified_gmt":"2018-03-10T00:09:03","slug":"desarrollo-y-estabilidad-de-biofilms-de-pseudomonas-de-origen-alimentario","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/desarrollo-y-estabilidad-de-biofilms-de-pseudomonas-de-origen-alimentario\/","title":{"rendered":"Desarrollo y estabilidad de biofilms de pseudomonas de origen alimentario"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Bego\u00f1a Ruiz Perez <\/strong><\/h2>\n<p>El crecimiento microbiano en forma de biofilms (conjuntos de c\u00e9lulas microbianas inmovilizadas sobre un suporte embebidas en una matriz exopolim\u00e9rica que sintetizan los propios microorganismos) puede considerarse ubiquo. en la industria alimentaria crean importantes problemas tecnol\u00f3gicos (obstrucci\u00f3n, corrosi\u00f3n, disminuci\u00f3n de trasnferencia energ\u00e9tica, etc.) E higi\u00e9nicos por contaminaci\u00f3n de los productos.  la formaci\u00f3n de biofilms de pseudomonas psicrotrofas es especialmente problem\u00e1tica en la industria l\u00e1ctea, ya que estas bacterias no solo pueden contaminar la leche sin tratar sino que sus productos extracellares termoestables (enzimas y pigmentos) causan defectos organol\u00e9pticos enla leche y sus derivados,incluso despu\u00e9s del tratamiento t\u00e9rmico.  a lo largo de estas tesis se han puesto a punto sistemas espec\u00edficos de cultuvo de biofilms de p. Fluorescens de origen alimentario (sistemas en matraces, cupones y placas) y m\u00e9todos de estimaci\u00f3n del n\u00famero de c\u00e9lulas adheridas (recuentos y microscop\u00eda confocal) y de la biomasa total (an\u00e1lisis de imagen por densitometr\u00eda, microscop\u00eda electr\u00f3nica de barrido y medioambiental).  as\u00ed mismo se ha determinado que tanto la cin\u00e9tica  de adhesi\u00f3n como el contenido encarbohidrato y prote\u00edna de la matriz de los biofilms de este microorganismo, dependen del tipo y concentraci\u00f3n de nutrientes presentes en el mido. Adem\u00e1s, la composici\u00f3n de los exopol\u00edmeros inegrantes de la matriz de biofilms formados sobre vidrio y acero difiere cuanti- y cualitativamente de la de los exopol\u00edmeros asociados a c\u00e9lulas planct\u00f3nicas.  por otra parte se ha determinado la influencia de compuestos autoinductores de tipo homoser\u00edn lactonas en el control de la dhesi\u00f3n, as\u00ed como la implicaci\u00f3n de enzimas producidas por las propias c\u00e9lulas adheridas en el desprendimiento de biofilms envejecidos.  finalmente se ha desarrollado unprocedimiento de destrucci\u00f3nd e biofilms de p.
