Uno exploratorio, en supermercados de la ciudad de buenos aires, en 1997 y el segundo, descriptivo, en hogares de al ciudad de r\u00edo cuarto, en 1998.   basados en los resultados se lleg\u00f3 a las siguientes conclusiones:  el conocimiento de alimentos ecol\u00f3gicos certificados por parte de los consumidores fue reducido, y por ende, su compra. Sin embargo, la percepci\u00f3n del significado conceptual de alimento ecol\u00f3gico bastante aproximada.  el nuevo producto tuvo muy buena acogida entre los degustadores. El sabor del queso fue el principal motivo asociado a la intenci\u00f3n de compra pero tambi\u00e9n, su atributo vinculado a la certificaci\u00f3n ecol\u00f3gica.  un importante porcentaje de consumidores estar\u00eda dispuesto a pagar un sobreprecio de 15 a 35 % aproximadamente. Las variables que diferenciaron el segmento de \u00abcompradores potenciales\u00bb fueron el precio sugerido y la naturaleza ecol\u00f3gica del producto, fundamentalmente.  en funci\u00f3n de los estudios realizados se lleg\u00f3 a la conclusi\u00f3n de que el queso gouda org\u00e1nico argentino \u00absan miguel\u00bb presenta, \u00bb a priori\u00bb, un segmento potencial de consumidores, tanto en la ciudad de r\u00edo cuarto como en capital federal.   en funci\u00f3n de los estudios realizados se lleg\u00f3 a la conclusi\u00f3n de que el queso gouda org\u00e1nico argentino \u00absan
