A continuaci\u00f3n se analizan metabolismo \u00e1cido y fermentativo, la evoluci\u00f3n temporal en maduraci\u00f3n y conservaci\u00f3n y la caracterizaci\u00f3n cin\u00e9tica de los enzimas clave, demostrando como ambos resultan excepcionalmente activos en este fruto de forma natural.  se presentan asimismo resultados obtenidos por la t\u00e9cnica de imagen por resonancia magn\u00e9tica nuclear (mri), describiendo detalladamente los cambios tisulares y de contenido de agua disponible que ocurren durante maduraci\u00f3n y conservaci\u00f3n en chirimoya.  por \u00faltimo se analizan los cambios compartimentos de ph durante maduraci\u00f3n, y los mecanismos implicados en mantener el estrecho control, imprescindible para la viabilidad celular.
