En los \u00faltimos a\u00f1os se ha experimentado un descenso del consumo en fresco y un aumento notable del transformado asociado con los cambios en los h\u00e1bitos de consumo. Esto, representa la acumulaci\u00f3n de grandes cantidades de cortezas (50% del peso total del fruto) que por otra parte tienen una intersante composici\u00f3n (pectina, flavonoides, carotenoides y d-limonero) desde el punto de vista nutricional y que puede representar beneficios para la salud.  en este sentido, este trabajo plantea la utilizaci\u00f3n de las t\u00e9cnicas de deshidrataci\u00f3nosm\u00f3tica e impregnaci\u00f3n a vac\u00edo como una tecnolog\u00eda de procesamiento m\u00ednimo, las cortezas de naranja Valencia late y mandarina satsuma, que permita desarrollar productos de alta calidad de uso directo o como ingredientes alimentarios.  se han utilizado soluciones de sacarosa, glucosa (dextrosa) y mosto de uva rectificada y concentrado (subproducto de las industrias de vinos que va a aportar az\u00facares naturales de frutas). Para ello se ha analizado la respuesta de las cortezas a la impregnaci\u00f3n a vaci\u00f3 (iv) con soluciones isot\u00f3nicas. Para poder entender mejor los mecanismos de transporte implicados en el proceso de deshidrataci\u00f3n se ha estudiado el proceso de equilibrado de la corteza con soluciones osm\u00f3ticas.  as\u00ed mismo, se ha analizado la cin\u00e9tica del proceso de deshidrataci\u00f3n osm\u00f3tica de las cortezas considerando diferentes variables (tipo y temperatura de tratamiento, tipo de soluci\u00f3n osm\u00f3tica).  por \u00faltimo, se han elaborado productos de corteza caracteriz\u00e1ndose los cambios de sus propiedades m\u00e1s relevantes (microestructura, color, propiedades mec\u00e1nicas y an\u00e1lisis sensorial) por efecto del tipo de tratamiento osm\u00f3tico. adem\u00e1s, se ha evaluado la estabilidad de algunas de estas propiedades a lo largo de un estudio de almacenamiento a
