Los sensores evaluados son:  * un sensor de visi\u00f3n artificial para la medida del calibre y del color de la fruta, as\u00ed como la detecci\u00f3n de los defectos externos.  * un sensor para determianr la firmeza a trav\u00e9s del estudio de la curva de respuesta de una c\u00e9lula de carga ante el impacto de la fruta.  * un sensor de medida del contenido interno en az\u00facares a partir del espectro de reflexi\u00f3n relativa del fruto en el infrarrojo cercano.  * un sensor de madurez basado en el estudio de la respuesta de un sensor de gases ante los vol\u00e1tiles que generan en el proceso psot-cosecha.  como resultado de la tesis, se realiza un diagn\u00f3stico de cada uno de los sensores, observ\u00e1ndose que:  * el sensor de visi\u00f3n artificial mide adecuadamente el color y el calibre, pero necesita mejorar la detecci\u00f3n de defectos.  * el sensor de firmeza permite la clasificaci\u00f3n del melocot\u00f3n en dos o tres grados de firmeza y detecta corectamente las mandarinas bufadas.  * el sensor de infrarrojos permite la clasificaci\u00f3n de melocotones seg\u00fan su dulzor, aunque resulta dificil su inclusi\u00f3n en l\u00ednea porque precisa el contacto sobre la muestra.  * el sensor de aromas es adecuado para la detecci\u00f3n de fruta sobremadura, pero es de dif\u00edcil aplicaci\u00f3n en la central debido a la contaminaci\u00f3n
