El analisis microbiologico de presencia\/ausencia demostr\u00f3 que el 40,3% de las comidas presentaban aerobios mes\u00f3filos, el 12,9% anaerobios mesofilos, el 9,8% coliformes, el 1,6% escherichia coli, el 2,8% enterococos, el 2,3% staphylococcus aureus, el 1,6% clostridium perfringens, no detectandose salmonella spp. El analisis estadistico de los resultados puso de manifiesto distintos niveles de significaci\u00f3n entre los grupos microbianos y el grado de manipulaci\u00f3n e ingrediente basico de las comidas.  b)control de la formaci\u00f3n en materia higi\u00e9nico-sanitaria de los manipuladores de alimentos: se ha investigado la influencia de distintos criterios sociales y personales en la formaci\u00f3n higio-sanitaria de manipuladores de alimentos. para ello, a una poblaci\u00f3n de 193 personas se les imparti\u00f3 un curso de identicos contenidos sobre manipulaci\u00f3n de alimentos, efectuandose controles para comprobaci\u00f3n de conocimientos previos y finales, asi como para valoraci\u00f3n de la formaci\u00f3n en las distintas unidades.
