La velocidad de oxidaci\u00f3n de cada pigmento depende, en primer lugar de su estructura. De esta forma los pigmentos carotenoides capsanteno y cpasorrubeno, que presentan uno o dos grupos ceto, se oxidan a menor velocidad que el resto de xantog\u00edlas y b-caroteno. Con estos resultados tambi\u00e9n se concluye que la capacidad antioxidante de los pigmentos cet\u00f3nicos es mayor que la que muestra el resto.  por otro lado el entorno lip\u00eddico que rodea e impregna a la fracci\u00f3n carotenoide influye en la velocidad de oxidaci\u00f3n, de forma que aquel sustrato de naturaleza poliinsaturada acelera las reacciones de oxidaci\u00f3n de pigmentos, en comparaci\u00f3n con un sustrato monoinsaturado. En ambos casos se mantiene que la velcodiad de oxidaci\u00f3n de pigmentos cet\u00f3nicos, es inferior a la del resto de pigmentos. Se establece, a priori este patr\u00f3n de estabilidad, que distingue pigmentos con distintas peculiaridades estructurales. Sin embargo este patr\u00f3n depende de la temperatura, ya que las reacciones de oxidaci\u00f3n de pigmentos carotenoides presentan un punto isocin\u00e9tico. A temperaturas por debajo de dicho punto el patr\u00f3n de estabilidad es el establecido anteriormente. a temperaturas por encima del punto isocin\u00e9tico el patr\u00f3n de estabilidad se invierte, degrd\u00e1ndose los pigmentos cet\u00f3nicos a mayor velocidad. Aunque los mecanismos que reacci\u00f3n son los mismos para toda la fracci\u00f3n carotenoide, alguna etapa de aquellos debe adquirir mayor importancia afectando, en fucni\u00f3n de la temperatura, de
